Proceeds from the sale of this cookbook will go to help fund educational opportunities and grants to schools for anti-bullying education, as well as further work helping those gluten intolerant become more resilient through healthier eating.
Christie Toribara, co-founder of SMILE, worked to develop this resource because of the challenges her son Craig faced with gluten-intolerance during his life and the challenges she now has due to an adult onset of the gluten-intolerance. She knows firsthand how this condition, if left undiagnosed and untreated, can contribute to the deterioration of the quality of life physically and emotionally. Her goal in writing this cookbook is to provide families with recipes that can be prepared and enjoyed by those with or without a gluten-intolerance. Along with over 300 delicious recipes, she has also included valuable information regarding flours, ingredients and the equipment that she uses when preparing these meals or beverages. Research has shown resiliency increases when a young person has at least one healthy and valued relationship. It is SMILE's hope and mission to help provides ways to promote this by making mealtimes simpler, more cohesive and fun.
For those wishing to use the cookbook with wheat, the gluten-free flours may be replaced with wheat flour. In the baked goods the total of the gluten-free flours and cornstarch volume may be replaced with wheat flour and disregard the xanthan gum.
